Because there is nowhere to hide. Cashew, sugar and patience — no flour, no filler. The price follows the ingredient, and the texture follows the hand.

Why is good rasmalai rare?

The milk decides everything. Too firm and it will not drink the cream; too soft and it collapses on the way to the table. The margin for error is minutes wide.

What actually affects texture?

Heat, timing and how long the mixture is worked. The same three ingredients can give you grain, chew or silk depending on the last four minutes.
